Vermentino is common in Italy, but noteworthy vermentino is harder to find. This is a delicious and fresh Sicilian example.

Sardine beccafico is a staple dish amongst Sicillians, marinate sardines in water and vinegar, add breadcrumbs, olive oil, raisins, pine nuts, sugar, chopped parsley, orange and lemon juice and serve with freshly baked bread.
