Florent Girou creates this wine as part of a collective called 'Les Équilibristes.' This translates to 'the tightrope walkers' who want to shake up winemaking. He has used organic fertilisers on the vineyard with minimal use of chemicals. He named this wine 'Hirtsue,' which means hairy. Although we dont know whether this refers to the mop of hair on his head or beacuse the wine puts hairs on your chest.
Marzipan, elderflower, lemons, white flowers and a nuttiness come together here. There's a really big body here and it's a delight to find. Another win for Bergerac.
