This Pinot Noir is a perfect example of the organic winemaking that takes place at Limney Farm where the Davenport Vineyards are located in East Sussex. Will Davenport started making wine in 1991, before going organic in 2000. Over the years, Davenport has become synonymous with English winemaking, and Will is often named as an influence for winemakers throughout the country.
As Will Davenport explains, this Pinot Noir is a wine that "[reflects] the grapes it’s made of rather than reflecting how clever we are at winemaking. So the Pinot Noir is basically fermented on the skins and then it’s pressed and put straight into barrels. And then left in barrels for nine months until just before harvest.”
